Ingredients

  • 1 1/2 cups sharp cheddar cheese, shredded
  • 1/2 cup crushed pecans
  • 1 tablespoon jalapeño, finely chopped
  • 1/4 cup coconut flour
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1 egg yolk
  • 2 tablespoons butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix the shredded cheddar cheese, crushed pecans, jalapeño, coconut flour, garlic powder, and salt.
  3. In a separate bowl, whisk the egg yolk and melted butter together.
  4. Combine the wet ingredients with the dry ingredients, stirring until a dough forms.
  5. Place the dough between two sheets of parchment paper and roll it out until it’s about 1/8-inch thick.
  6. Remove the top parchment paper and cut the dough into small squares.
  7. Transfer the crackers (on the parchment) to the baking sheet and bake for 12-15 minutes, or until golden and crispy.
  8. Let the crackers cool completely before serving. Store in an airtight container.
