Low-Carb Beef & Broccoli Stir-Fry

Ingredients:

– 1 lb flank steak, thinly sliced

– 3 cups broccoli florets

– 2 tablespoons soy sauce (or tamari for gluten-free)

– 1 tablespoon sesame oil

– 2 cloves garlic, minced

– 1 tablespoon grated ginger

– 1 tablespoon olive oil

– 1/4 cup beef broth

– 1 tablespoon sesame seeds (optional garnish)

– Salt and pepper to taste

Instructions:

1. Prepare the Beef 

   Thinly slice your flank steak or sirloin against the grain for maximum tenderness. Season the beef slices with salt and pepper. 

   Pro Tip: For easier slicing, pop the beef in the freezer for 15 minutes before cutting. This helps you get thin, even slices.

2. Sear the Beef 

   Heat a large skillet or wok over medium-high heat and add the coconut oil. Once hot, add the beef slices in a single layer, searing each side for 2-3 minutes until browned but still tender. Remove the beef from the pan and set aside. 

   Substitution Tip: Don’t have flank steak? Ground beef or thinly sliced sirloin work just as well!

3. Cook the Broccoli 

   In the same pan, add the broccoli florets and a splash of water. Cover and steam for about 4-5 minutes, just until the broccoli is tender but still bright green and slightly crisp. Remove the lid and cook for another minute to evaporate any remaining water.

4. Make the Sauce 

   Lower the heat to medium and add the minced garlic and ground ginger to the pan. Sauté for 30 seconds until fragrant, then stir in the soy sauce, sesame oil, and rice vinegar. Let the sauce simmer for 1-2 minutes to thicken slightly. 

   Substitution Tip: If you’re avoiding soy, feel free to swap the soy sauce with coconut aminos for a milder, slightly sweeter sauce.

5. Combine the Beef & Broccoli 

   Return the beef to the pan and toss everything together, making sure the sauce coats the beef and broccoli evenly. Let everything heat through for another 2 minutes. 

   Optional: If you like a little spice, now’s the time to add those red pepper flakes for a gentle kick.

6. Taste and Adjust 

   Give the stir-fry a quick taste. Need more salt? Maybe a dash more soy sauce or vinegar? Adjust to your liking. The balance of umami from the soy, nutty sesame oil, and the bright vinegar should hit just right.

7. Serve & Enjoy
