Ingredients
- 1 pound ground beef (80/20 for that ideal fat-protein ratio)
- 1 small head cauliflower, cut into florets
- 1/2 cup shredded cheddar cheese
- 1/4 cup cream cheese
- 1/4 cup heavy cream
- 1 tablespoon olive oil (or butter if you want extra flavor)
- 2 garlic cloves, minced
- Salt and pepper to taste
- 1 teaspoon smoked paprika
- Fresh parsley for garnish (optional)
Instructions
- Preheat the oven to 375°F. Steam or boil cauliflower florets for 5–7 minutes, until just fork-tender, then drain very well.
- Heat olive oil or butter in a skillet over medium-high heat. Add ground beef and cook 6–8 minutes, breaking it up, until browned and cooked through.
- Add garlic, smoked paprika, salt, and pepper. Stir for 1 minute.
- Lower heat and stir in cream cheese and heavy cream until creamy. Fold in the cauliflower.
- Transfer to a baking dish, top with cheddar, and bake 15–20 minutes, until bubbling and melted.
- Garnish with parsley and let rest 5 minutes before serving.
