Ingredients

  • 1 pound ground beef (80/20 for that ideal fat-protein ratio)
  • 1 small head cauliflower, cut into florets
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup cream cheese
  • 1/4 cup heavy cream
  • 1 tablespoon olive oil (or butter if you want extra flavor)
  • 2 garlic cloves, minced
  • Salt and pepper to taste
  • 1 teaspoon smoked paprika
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat the oven to 375°F. Steam or boil cauliflower florets for 5–7 minutes, until just fork-tender, then drain very well.
  2. Heat olive oil or butter in a skillet over medium-high heat. Add ground beef and cook 6–8 minutes, breaking it up, until browned and cooked through.
  3. Add garlic, smoked paprika, salt, and pepper. Stir for 1 minute.
  4. Lower heat and stir in cream cheese and heavy cream until creamy. Fold in the cauliflower.
  5. Transfer to a baking dish, top with cheddar, and bake 15–20 minutes, until bubbling and melted.
  6. Garnish with parsley and let rest 5 minutes before serving.
