Ingredients

  • 1 1/2 cups sharp cheddar cheese, shredded
  • 1/2 cup crushed pecans
  • 1 tablespoon jalapeño, finely chopped
  • 1/4 cup coconut flour
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1 egg yolk
  • 2 tablespoons butter, melted

Instructions

  1. Preheat the oven to 350°F. Line a baking sheet with parchment paper.
  2. Mix cheddar, crushed pecans, jalapeño, coconut flour, garlic powder, and salt in a bowl.
  3. Add egg yolk and melted butter. Stir until the dough holds together. If it is crumbly, press it together with your hands.
  4. Roll or press the dough between two sheets of parchment to about 1/8–1/4 inch thick, then cut into cracker squares.
  5. Bake for 10–13 minutes, until the edges are browned and the centers are firm.
  6. Cool completely on the pan so the crackers crisp up.
