Ingredients

  • 3 large eggs
  • 2 oz cooked bacon, chopped
  • 2 oz cooked sausage, crumbled
  • 2 oz ham, diced
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup heavy cream
  • Salt and pepper to taste
  • 1 tablespoon butter
  • Chopped chives for garnish

Instructions

  1. Whisk the eggs, heavy cream, salt, and pepper in a bowl until the mixture is smooth and slightly frothy.
  2. Warm a nonstick skillet over medium-low heat and melt the butter, tilting the pan to coat the bottom.
  3. Pour in the egg mixture and cook for 2–3 minutes, gently pulling the cooked edges toward the center so uncooked egg can flow underneath.
  4. When the omelet is mostly set but still slightly glossy on top, add the bacon, sausage, ham, and cheddar over one side.
  5. Fold the omelet in half and cook 1–2 minutes more, until the cheese is melted and the eggs are fully set.
  6. Slide onto a plate and finish with chopped chives. Serve hot.
