Get ready for some spooky fun with these Keto “Mummy” Bacon-Wrapped Meatballs, perfect for your Halloween party spread! Wrapped in crispy bacon with gooey mozzarella “bandages,” these adorable little mummies are not only festive but also keto-friendly, making them a great addition to your low-carb Halloween hors d’oeuvres.

Ingredients:

  • 1 lb ground beef
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 10 slices of bacon, cut in half
  • 4 oz mozzarella cheese (cut into thin strips)
  • Black olives (sliced, for “eyes”)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, mix together the ground beef, Parmesan, egg, garlic, onion powder, salt, and pepper. Form into 20 small meatballs.
  3. Wrap each meatball with half a slice of bacon, making sure to cover as much of the surface as possible.
  4. Place the bacon-wrapped meatballs on a baking sheet lined with parchment paper. Bake for 20-25 minutes or until the bacon is crispy and the meatballs are fully cooked.
  5. Remove from the oven and let cool slightly. Once cool enough to handle, wrap thin mozzarella strips around the meatballs to create a mummy effect.
  6. Place two small slices of black olive on each meatball to form the “eyes.”
