Ingredients
- 1 lb ground beef (or ground chicken for a lighter version)
- 4 oz cream cheese, softened
- 1/2 cup shredded cheddar cheese
- 2 fresh jalapeños, deseeded and finely chopped
- 4 slices cooked bacon, crumbled
- 1 large egg
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 1 tablespoon olive oil (for frying)
- Fresh parsley for garnish (optional)
Instructions
- Preheat the oven to 400°F if baking. Line a baking sheet with parchment paper.
- Mix ground beef, cream cheese, cheddar, jalapeños, bacon, egg, garlic powder, onion powder, salt, and pepper until evenly combined.
- Roll into meatballs about 1 1/2 inches wide.
- Bake for 16–20 minutes, until browned and cooked through. For skillet cooking, heat olive oil over medium heat and cook 10–12 minutes, turning often.
- Let the meatballs rest 3 minutes before serving so the cheese filling sets slightly.
