Ingredients

  • 1 lb ground beef (or ground chicken for a lighter version)
  • 4 oz cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 2 fresh jalapeños, deseeded and finely chopped
  • 4 slices cooked bacon, crumbled
  • 1 large egg
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil (for frying)
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat the oven to 400°F if baking. Line a baking sheet with parchment paper.
  2. Mix ground beef, cream cheese, cheddar, jalapeños, bacon, egg, garlic powder, onion powder, salt, and pepper until evenly combined.
  3. Roll into meatballs about 1 1/2 inches wide.
  4. Bake for 16–20 minutes, until browned and cooked through. For skillet cooking, heat olive oil over medium heat and cook 10–12 minutes, turning often.
  5. Let the meatballs rest 3 minutes before serving so the cheese filling sets slightly.
