Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup fresh spinach, chopped
- 4 oz cream cheese, softened
- 1/2 cup shredded mozzarella cheese
- 2 cloves garlic, minced
- 1 tablespoon olive oil (or butter)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat the oven to 375°F. Cut a pocket into the side of each chicken breast without slicing all the way through.
- Mix chopped spinach, cream cheese, mozzarella, minced garlic, garlic powder, onion powder, salt, and pepper in a bowl.
- Stuff each chicken breast with the spinach-cheese mixture and secure with toothpicks if needed.
- Heat olive oil in an oven-safe skillet over medium-high heat. Sear chicken 2–3 minutes per side until lightly browned.
- Transfer the skillet to the oven and bake 18–22 minutes, until the chicken reaches 165°F internally.
- Rest 5 minutes, remove toothpicks, garnish with parsley, and serve.
