Moderate Carb Beef & Sweet Potato Skillet

Ingredients:

– 1 lb ground beef (85/15 lean)

– 2 medium sweet potatoes, peeled and diced

– 1/2 cup chopped red onion

– 1/2 cup chopped bell peppers (any color)

– 2 tablespoons olive oil

– 2 teaspoons smoked paprika

– 1 teaspoon garlic powder

– 1 teaspoon cumin

– Salt and pepper to taste

– Fresh parsley for garnish

Instructions:

1. Cook the Sweet Potatoes 

   Heat a large skillet over medium heat and add the olive oil. Once the oil is hot, add the diced sweet potatoes. Cook for about 8-10 minutes, stirring occasionally, until they start to soften and get golden brown on the edges. 

   Pro Tip: To speed up the cooking, you can pre-steam or microwave the sweet potatoes for a few minutes before adding them to the skillet.

2. Sauté the Onions & Garlic 

   Push the sweet potatoes to the side of the skillet and add the diced onions. Cook for about 3 minutes, stirring occasionally, until the onions are soft and translucent. Add the minced garlic and cook for another 30 seconds, just until fragrant.

3. Brown the Ground Beef 

   Add the ground beef to the skillet, breaking it apart with a spatula. Season with salt, pepper, cumin, and smoked paprika. Cook the beef for 7-8 minutes, stirring occasionally, until it’s browned and cooked through. 

   Substitution Tip: Ground turkey or ground pork can easily replace the beef for a different protein option.

4. Combine Everything 

   Stir the sweet potatoes, onions, and garlic into the ground beef, making sure everything is well-combined and the flavors have melded together. Let everything cook together for another 2-3 minutes to ensure it’s all heated through.

5. Taste and Adjust 

   Give the skillet a quick taste. Need a little more salt or pepper? Maybe a touch more smoked paprika for that smoky edge? Adjust to your liking.

6. Serve & Enjoy
